Organic vacation in the Salzburg Lake District

The Salzburg Lake District is the region of four lakes, Wallersee, Mattsee, Obertrumer See and Grabensee, which lie around Salzburg. Organic hay region in the Salzburg Lake District

The “Organic Hay Region” joint project was launched in 2001 by Salzburg and Upper Austria. As mentioned, 240 organic farmers are taking part in the Trumer Lake District. In addition to organic farming, these companies are linked by the regional economy of “haymaking”. It is the basis for special products made from organic hay milk. The 240 organic farmers come from 27 communities in the region. They cooperate with businesses, the tourism industry and cultural businesses. Together, the companies and organizations involved initiate numerous marketing activities, conduct public relations work, provide information about sustainable living and promote nature and soil protection as well as greater energy efficiency in the region.

The organic hay region is one of the last contiguous areas in Europe with a functioning hay industry. At the same time, it is one of the largest regions of its kind. Hay farming is a very old agriculture that is considered the most original form of milk production. The dairy cows are fed according to the season. They spend the summer on the mountain pasture. The farmers mow the meadows and store the grass, which is used as hay for winter feeding. The only permitted supplement is mineral-rich grain meal, while fermented feed – including silage – is strictly prohibited. In the Salzburg Lake District, 25 million liters of organic hay milk are produced silage-free every year. Six regional cheese dairies process this milk.

Across Europe, only three percent of milk comes from hay farming. In addition to organic hay farming, the Salzburg Lake District also offers organic apple juice, organic goat cheese and many other regional specialties from purely organic farming. In 2019, the organic hay region of the Trumer Lake District received the Leopold Kohr Prize for cultural, social and economic projects.
