In the Salzburg Lake District, 25 million liters of organic hay milk are produced silage-free every year. Six regional cheese dairies process this milk.

Across Europe, only three percent of milk comes from hay farming. In addition to organic hay farming, the Salzburg Lake District also offers organic apple juice, organic goat cheese and many other regional specialties from purely organic farming.
